Instructions
1. Rinse the rice
Place the rice in a fine-mesh sieve and rinse it under cold running water until the water runs mostly clear. This removes excess surface starch and helps prevent the rice from clumping during cooking.
2. Cook the rice
In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or until the water has been absorbed and the rice is tender. Remove from heat.
3. Combine the pudding ingredients
Transfer the cooked rice to a large, heavy-bottomed saucepan. Add the milk, sugar, salt, and cinnamon if using. Stir well to combine and ensure the rice is evenly distributed in the milk.
4. Cook the pudding
Place the saucepan over medium heat and bring the mixture to a gentle simmer. Cook for 20 to 25 minutes, stirring frequently to prevent scorching on the bottom of the pan. As the rice cooks in the milk, it will absorb liquid and release starch, causing the mixture to gradually thicken.
5. Add eggs for extra creaminess (optional)
If using eggs, whisk them in a separate bowl until smooth. To prevent curdling, slowly add a ladleful of the hot rice mixture to the eggs while whisking constantly. Repeat once more, then pour the tempered egg mixture back into the saucepan. Cook for an additional 2 to 3 minutes, stirring constantly, until the pudding thickens further. Do not allow the mixture to boil after adding the eggs.
6. Finish the pudding
Remove the saucepan from the heat. Stir in the vanilla extract and any dried fruit you are using. Taste and adjust sweetness or seasoning if needed.
7. Rest and serve
Allow the rice pudding to cool slightly before serving. The pudding will continue to thicken as it cools. It can be served warm for a comforting dessert or chilled for a firmer, custard-like consistency.
Serving Suggestions
Spoon the rice pudding into individual bowls and, if desired, sprinkle lightly with ground nutmeg or additional cinnamon. It can also be topped with fresh fruit, toasted nuts, or a drizzle of honey for added flavor and texture.

- For an even creamier pudding, stir in a small amount of cream or butter at the end of cooking.
- To add aromatic flavor, gently heat the milk with cardamom pods, a cinnamon stick, or lemon zest before combining it with the rice, then remove the aromatics.
- For a dairy-free version, substitute coconut milk or almond milk, keeping in mind the flavor will change.
- Leftover rice pudding can be stored in an airtight container in the refrigerator for up to one week. When reheating, stir in a little milk to restore the creamy texture.
